FROM BEEF CHAROLAIS TO CHIANG MAI TO THE NIGHT MARKET....A DREAM OR REALITY ???
One thing I didn't imagine was eating beef Charolais on a night market in Chiang Mai.
My French husband being from the Charolais you imagine well that he was very curious and wanted to test...

Just for info you have to know what beef Charolais is, certainly many know it but maybe not everyone.
It is a meat that has a AOC (appellation of Origin controlled) and is one of the best meat in the world. The animals are bred in Charollais, free in high quality pastures.
From there to say that this meat is commonly imported into Thailand, I honestly doubt it. On the other hand I know that some (French) breed in Thailand by crossing Charollais with a local breed which moreover gives an excellent meat (I would not say where but... it exists).
As I didn't really know where the meat came from exactly, the best thing was actually to try.
We first test 3 first skewers without saying anything to the preparer. After cooking (long enough) we settled down to a small table to taste. The meat was good but much much overcooked and more its immersion in a mixture of sauce based on different ingredients but mostly very spicy surprised my husband and his western palate so that he no longer felt the taste of meat but AV Especially want to drink large quantities of water.
The meat was a bit hard because overcooked.
The second test was much better. We asked the preparer not to soak the meat in the sauce but to cook it as and especially stop cooking when we tell it.
After a few duplexes on the barbecue we informed our nice cook that it was OK.
Return to our table (after paddling 2 sachets of mustard at the stand next door and ordered a plate of fries).
It must be said that it was really good and we really apprécié...de the very good meat...
is the Charollais or the Charollais "crossed"... always is it that was succulent, a very tender meat...
If you see the stand, start but watch the cooking!
Enjoy your meal...
