THAI COOKING CLASS...A TREAT !
In Thailand there are many places where you can indulge in cooking classes but in any case Chiang Mai is one of the leading places where the best schools are found.
We tested a lot and I have to say that the choice was not necessarily simple because the overall level of quality is high enough.
As we had to make a choice we opted for a school that is about thirty minutes drive from Chiang Mai but has two advantages:
-A quality coaching where everything takes place in joy and good humour and where the trainers keep in mind that people are here on vacation
-a pleasant setting in the countryside with a very large garden in an organic farm where everything grows without chemical fertilizer.

How a cooking class takes you first choose whether you want half a day (morning or afternoon) or a full day.
Personally I think a full day is a bit long (unless you are a true enthusiast) and half a day is already a very good exercise.
If you choose the morning session we will pick you up around 8:30 am at your hotel and you will be back around 2:30 pm.
If you choose the afternoon session, we'll pick you up around 2:30 pm and you'll be back around 8:30 pm.
Let's take the example of a morning session.
First we go into a local market to buy various ingredients that will be needed to prepare the dishes. Here you will already have a first glimpse of things you do not know and you will be plunged through all the scents.
Then, at the farm, each one has a apron and a big hat, with a small basket to go to the garden to gather all the herbs and plants that will be needed.
Now that we have everything, our trainer gathers us around a table so that we choose the dishes we want to prepare. There is in principle a soup, a curry and another dish to choose from.
The choice is made you will have an appointment in front of your workstation i.e. a gas cooker with nearby and for each of the different utensils necessary.
Then begins the preparation of the first dish under the benevolent instructions, detailed and in a festive atmosphere, a feast of local culture with explanations in English but with a Thai accent so tasty that already the atmosphere is at the feast, Not to mention the humour and the smile of the trainer.
With her nothing is complicated and she knows how to help when it is necessary, advise and is very good pedagogue.
After the preparation of each dish we pass to the table to taste and there, atmosphere guaranteed, each one makes taste to the other, a real moment of exchange very friendly.
I will not give more details because it is mostly a human experience to live. No need to know how to cook, just love what is good and the rest follows naturally.
